Serves: 4
  • 4 strips of thick cut bacon (cut into small bits)
  • 2 lbs. of potatoes, cut into wedges
  • salt and pepper
  • garlic powder
  • cajun seasoning
  • shredded cheese
  • 1-2 stalks green onions, sliced
  1. Preheat oven to 425 degrees. Prep your potatoes while it's warming up.
  2. Place the potato wedges into a large heat safe bowl with a little bit of water. Cover loosely and steam in the microwave for about 4 minutes.
  3. Drain excess moisture from the potato wedges and set them aside to dry.
  4. Brown the bacon in a skillet until they're crispy and set aside but don't throw out the bacon fat.
  5. Place the dried off potatoes back in your bowl, pour the bacon fat from your skillet over the potatoes. Give the potatoes and bacon fat a good mix.
  6. Season the potatoes with salt, pepper, and some cajun seasoning and give it another good mix.
  7. Pour the seasoned wedges on to a large baking sheet and place in the oven to cook for about 25 minutes. Check them periodically to stir and turn. You want to get them crispy all over.
  8. When done, layer the wedges in to a heat proof skillet or large bowl and layer with shredded cheese and cooked bacon bits.
  9. Place the wedges back in to the oven for a few minutes. Just long enough to melt the cheese.
  10. Garnish with sliced green onions and serve with some sour cream for dipping on the side.
