I work full-time and usually have to hurry to get dinner on the table. The family is hungry at the end of the day and they don’t like to wait! So I’m always looking for ways to get a meal on the table quickly and without a lot of fuss. This sheet pan supper fits the bill. It’s so easy and you can have it ready in less than an hour. Just some quick chopping and everything goes on the sheet pan to bake. Couldn’t be easier. Plus, it’s versatile. Throw in what you have. It’s great for cleaning out the fridge.
Below is what I had in my fridge: some chicken thighs and a package of sausage. Onions and potatoes are pantry staples for us and I had some peeled garlic cloves that I needed to use.
I just chopped up the onion and potatoes and then threw everything on my sheet pan. I should have put parchment paper down and then it wouldn’t have been any effort to clean up afterwards. I did put the chicken thighs skin side down to start with.
Drizzle everything with a little olive oil and then season with salt, pepper, dried thyme and rosemary and we are good to go. Bake at 425F for 45 minutes or until your chicken is done. Turn the chicken over about half-way through cooking to crisp up the skin and that’s it! Dinner is ready!
The whole garlic cloves soften and caramelize and turn sweet. You can eat this meal right out of the pan. Serve with a loaf of French bread to dip in the olive oil and smear the garlic cloves on! Yummy!
